The owners of Park Plaza Hotels understood that they had a hotel restaurant and it was not enough to bring in customers from outside. They also realised their location had a lot of competition, so the residents of the hotel were more likely not to eat in. It was clear they had to do some thing different. Tozi was built with an Italian theme, the menu was traditional, but the ingredients were of a very high standard. I understand it worked and attracts non-residents. They built another in Amsterdam.
